Zucchini Bread Breakfast Pizza

Serves: 1

  • 2 tablespoons coconut flour
  • 1/8 teaspoon cinnamon
  • 1 egg, beaten
  • 1/2 cup shredded zucchini
  • 1/2 tablespoon maple syrup
  • 1/8 teaspoon vanilla extract
  • 1/4 cup greek yogurt
  • fruit, any kind
  • orange zest
  • maple syrup for drizzling
  • crushed nuts
  1. Preheat oven to 350 degrees.
  2. Combine coconut flour and cinnamon in a bowl. Add remaining ingredients (excluding toppings) and mix well to combine.
  3. Spread mixture into a pizza crust on a cooking sheet lined with parchment paper.
  4. Bake for 15 minutes, or until done. Let cool and spread on yogurt and top with fruit.
  5. Enjoy! *feel free to top it off with whatever your little heart desires!
