Chicken Liver Pate

I tasted this first at a catered wedding in Boston over 30 years ago. I asked for and received the recipe from the caterers who said it was from California Cookbook. —Picholine

Ingredients
  • 1 cup Walnuts finely chopped
  • 1/2 pound Chicken Livers
  • 2 tablespoons Minced Onion
  • 3 tablespoons Butter
  • 1/4 teaspoon Curry Powder
  • 1/4 teaspoon Sweet Paprika
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Chicken Broth
  • 16 ounces Cream Cheese
Directions
  1. Lightly toast walnuts and set aside.
  2. Sauté chicken livers and onions in butter over medium heat about 5 minutes.
  3. Add curry powder, paprika, salt,pepper and chicken broth. Cool slightly.
  4. Place this mixture in a food processor and process till smooth.
  5. Beat the softened cream cheese in a large bowl .
  6. Combine cream cheese with chicken liver mixture.
  7. Stir in walnuts and chill 5-6 hours to blend flavors.
  8. Serve in a chilled crock with your choice of crackers, breads or toasts

Many people do not like pate but if you do,this is the tastiest. It’s smooth and creamy with just a hint of curry and toasted walnuts!
