Author Notes: Heirloom Tomato Caprese with Balsamic Aioli - a deliciously simple sandwich made with fresh, velvety mozzarella, juicy, tart and sweet heirloom tomatoes, garlicky pesto, a creamy, tangy aioli, and a rustic loaf of ciabatta.Sarah {Thyme to Eat}

Serves: 4


  • heirloom tomatoes
  • fresh log of mozzarella
  • pesto
  • loaf or rolls of ciabatta

Balsamic Aioli

  • 1/2 cup mayonnaise
  • 1/2 tablespoon balsamic vinegar
  • pinch of salt
  1. To make the aioli, mix the ingredients in a bowl.
  2. To assemble sandwich, spread pesto on one half of the roll. Top with fresh mozzarella log slices. Top with tomato slices. Spread balsamic aioli on the other half of the roll, and top your sandwich.
  3. If desired, use a panini press or grill to grill the sandwich.
