These churro waffles taste just like a churro! They are prefect breakfast to make on Sunday morning. I got this recipe from serious eats. It called for a chocolate sauce but I skipped that step. —lovethycook

Ingredients
  • 1/2 cup water
  • 4 tablespoons salted butter d
  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 2 tablespoons salted butter
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
Directions
  1. In a small saucepan, bring water, 4 tbsp butter, salt, sugar, and cinnamon to a simmer over high heat.
  2. When butter has melted and sugar and salt have dissolved, lower heat to medium, add flour, and stir rapidly. The batter will form quickly as the flour absorbs the water mixture. Continue to cook over medium heat, stirring, for 1 minute.
  3. Remove saucepan from heat and allow mixture to stand for 5 minutes. Add eggs one at a time to batter mixture, stirring until each is incorporated. The batter will be very stiff.
  4. Preheat the waffle iron. (Set it to medium if it has temperature settings.) Coat both sides of the waffle iron with nonstick cooking spray. Place about 1/4 cup of batter on each section of waffle iron. Do not overstuff waffle iron—the batter will expand considerably. Cook for 5 minutes.
  5. Once done, melt 4 tbsp of butter and brush the waffles. One a plate mix 1/2 cup of sugar and 1/2 tsp of cinnamon. Coat the waffles on both sides and then enjoy!!
