This is a version of a canapé we've been making for years- often the result of blending together various last small bits of things to spread on other things. The most elaborate version we ever made included cornbread crackers we made by cutting hundreds of small circles out of a thin, sheet pan cornbread and rebaking to a medium brown. This one uses the sweetness of caramelized apples and onions to balance the smokey ham. Delicious on crackers, dipped with carrots or spread on toast with a fried egg. —savorthis

Ingredients

neutral oil

small yellow onion, diced

small apple, peeled, cored, sliced

1/4 pound
smoked ham, diced

3/4 cup
cream cheese

1 teaspoon
worcestershire sauce

black pepper

lemon juice

parsley or chives for garnish
Directions

Heat 1/2 T oil in a saucepan over medium high heat. Sauté until medium brown, deglazing pan with a splash of water if needed, about 15 minutes. Scrape onions into food processor. Add another 1/2 T oil and sauté apples until soft and caramelized with no liquid left in pan. Place in food processor. Add remaining oil to pan and brown ham, adding to food processor when done. Add cream cheese, worcestershire and pepper and blend until almost smooth. Taste and adjust with salt and a squeeze of lemon (depending on sweetness of apples). Scrape into a bowl and chill completely before serving.
