Ingredients
  • 3/4 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon all-spice
Directions
  1. Preheat oven to 350F. Line two baking sheets with parchment paper.
  2. In a standing mixer fitted with the paddle attachment, cream butter and a cup of sugar until light and fluffy, about 5 minutes.
  3. Beat in egg and molasses until thoroughly incorporated.
  4. In a bowl, sift together flour, baking soda, salt and spices.
  5. On low speed, add flour mixture until just combined.
  6. Form the dough into tablespoon-sized balls. Roll in the remaining 1/4 cup sugar to coat.
  7. Place onto the prepared baking sheets. Leave two inches apart between cookies.
  8. Bake for 10 to 12 minutes. Transfer to wire rack and cool completely.

This recipe produced a very soft, sticky dough and much puffier cookies than the photo. They have a very soft interior.
