Author Notes

Last minute simple, slightly sweet dessert to serve at a summer party, after a slightly rich main or for an afternoon high tea? A fruit fool is quick to make and stores well until you’re ready to serve. All the odd fruits you have left blend up, leaving the skins on for taste and texture. Here we have used pears, apples, red grapes, banana and a tangerine. Pop in shallow dishes, pour over a little pine syrup and top with plain yoghurt or a little cream if you wish. —Peppertony Food
