Ingredients
  • Avocado Kale Salad
  • 1 Bunch of kale chopped finely
  • 1 can black beans
  • 1 cup frozen corn, thawed
  • 1 small avocado, cubed
  • 1-2 smoked roasted red pepper, chopped (I prefer the brand m'lady)
  • Sweet Lime Cumin Dressing
  • Juice of 1 and a half limes
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 1 teaspoon honey (or to taste)
  • 1 teaspoon cumin
  • 1 teaspoon chili pepper
  • Sea salt
  • Pepper
  • 1/2 teaspoon Cayenne (optional)
Directions
  1. Avocado Kale Salad
  2. Prep all ingredients. Tear kale into bowl, top with remaining items.
  1. Sweet Lime Cumin Dressing
  2. Melt butter in microwave. Juice lime into small bowl, add melted butter, olive oil, and honey, whisk. Add salt and pepper, cumin, and dried chile pepper. Taste and adjust proportions to your liking. Drizzle over salad.
