A traditional Austro-Hungarian appetizer, this cheese spread is spiced with the classic paprika and caraway flavors. Add a pinch of hot paprika for a kick! As written, it makes an excellent topping for crisp crackers or bruschetta; add a bit more sour cream and you get a flavorful dip for crudités. —Windischgirl

Ingredients
  • 8 ounces Farmer's curd cheese, or a drier large curd cottage cheese
  • 2-3 tablespoons Sour cream or nonfat Greek yogurt
  • 2 tablespoons Each minced chives,dill, and parsley
  • Salt and freshly ground pepper to taste
  • 1/2 teaspoon Caraway seeds, lightly crushed
  • 1-2 teaspoons Sweet paprika, to taste
  • 1/4 teaspoon Hot paprika, optional
Directions
  1. In a large bowl, using a fork, blend the curd cheese, sour cream, and herbs. Add the spices, using a generous hand with the pepper and paprika (but go easy on the salt, as the curd cheese may be salty). Blend well. Go for a spreadable consistency.
  2. Scrape into a serving dish and cover. Chill for several hours to allow flavors to blend. Garnish with a sprinkling of minced fresh herbs or paprika just prior to serving with crisp crackers...rye toasts are particularly tasty.
  3. To modify this into a dip, add an additional tablespoon or two of sour cream to achieve a dippable texture. Serve with an assortment of crudités. The flavors go well with cucumber spears, celery sticks, and pepper wedges.
