Ingredients

eggs

2 cups
100% egg whites liquid

large zucchini

1 teaspoon
garlic powder

8inch tortillas (whole wheat, brown rice etc.)

1 cup
shredded cheese (I used colby)
Directions

Preheat oven to 350F

Whisk all ingredients together in a small bowl, add to a greased 8x8 baking dish.
Bake for 35-45 minutes until eggs are set, let stand for 5-10 minutes.
FOR QUESADILLA: Fill tortilla with 1/8 of chopped quiche (1/2 of a serving) and 2T of shredded cheese. Pan fry turning every 1-2 minutes until tortilla is crispy and cheese is melted.
