Leftover Turkey Croquettes

Looking to liven up some leftover meat? This leftover turkey croquette recipe is the perfect excuse to deep-fry your leftovers into something incredible. —Melissa | Bits of Umami

  • Makes 20 croquettes
  • Croquettes
  • 4 cups Cooked Turkey Meat
  • 1/2 cup Cilantro
  • 2 tablespoons Lime Juice
  • 1 diced yellow onion
  • 5 tablespoons Butter
  • 1/2 cup Flour
  • 1 1/2 cups Milk
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 1 tablespoon Red Cooking WIne
  • 1 cup Bread Crumbs
  • Breading & Frying
  • 2-3 Eggs
  • 1 cup Bread Crumbs
  • 1/2 cup Flour
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • Vegetable Oil
In This Recipe
  1. Mix turkey meat with cilantro and lime
  2. Grind turkey mixture in a food processor
  3. Heat large pan to medium high heat and add butter
  4. Once butter is melted add onions and sauté until translucent
  5. Add flour to pan to begin the roux and whisk in milk
  6. Once thickened – add in salt, pepper, red wine, and nutmeg
  7. Add in turkey mixture and 1 cup bread crumbs
  8. Simmer for 10 minutes
  9. Add mixture into a baking pan and refrigerate for 2-3 hours
  10. Set up breading station – You will need: 1 bowl with 2-3 eggs + 2 teaspoons of water, 1 plate with bread crumbs + flour + salt/pepper, and tray of croquette mixture
  11. Begin by forming croquettes into cylinders. You can use a tablespoon to measure out equal portions – I used 2 tablespoons for each If mixture is too sticky, you can add additional bread crumbs. Make sure to completely mix throughout entire mixture
  12. Dip croquettes into eggs and then roll them in the bread crumb mixture to cover
  13. Dip breaded croquette in eggs again and then re-roll in bread crumbs
  14. Place twice breaded croquette in a separate baking pan
  15. Once all croquettes have been breaded – cover pan with plastic wrap and freeze
  16. When ready to cook – heat oil in a deep fryer to 350 degrees
  17. Place croquettes in 1 layer in deep fryer basket and fry for 3-4 minutes
  18. Remove and place on plate with paper towels to soak up excess oil
  19. Serve and enjoy! – My family likes to eat them with some ketchup on the side ☺
