Serves 2

  • 1 cup AP flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1 pinch salt
  • 1/2 cup half and half
  • 1/2 cup heavy cream
  • 1 egg
  • zest of one tangelo or orange
  • 1 tablespoon vanilla extract
  • 1 tablespoon melted butter
  1. Mix flour and baking powder together. Whip egg, and add cream, 1/2 + 1/2, vanilla, melted butter, zest, sugar and a good pinch of salt. Mix until well incorporated. Add wet to dry and mix until there are no lumps. Set aside. Melt butter in your favorite pancake pan and fry one pancake at a time (keep warm in a low oven). Makes app 4-5. I like to warm maple syrup with butter and brush onto pancakes then sprinkle with cinnamon sugar.
