Hijiki is an easy way to add flavor and variety to a bowl of rice. Great on its own or as the base for a fully loaded rice bowl, hijiki rice also makes a great snack as onigiri. For the hijiki no nimono recipe, see Basic Hijiki no Nimono. —Katie Okamoto

Ingredients

1 & 1/2 cups
white or brown short-grain rice

2 teaspoons
sake
-
1 teaspoon
soy sauce

Pinch
salt

1/2 cup
frozen peas or frozen soybeans

1/4 cup
prepared hijiki no nimono, plus more as desired
Directions

Prepare rice in your typical way, but replace 3 teaspoons of the water with the sake and soy sauce. Add the salt and peas or soybeans to the pot or rice cooker and cook until done.

When the rice is cooked, allow it to steam for at least ten minutes before opening the lid. Fold in hijiki no nimono, starting with 1/4 cup and adding more as desired.
