Author Notes: The perfect way to end a meal. Sweet, light, and unique, this recipe is as easy as pie and as guilt-free as, well, a pineapple!Virginie Degryse

Serves: 4

  • 1 pineapple
  • 1 cup chopped glazed pecans
  • 1 bunch fresh mint
  • 1 splash maple syrup
  1. Slice the pineapple as thin as you can, and arrange on a plate nicely.
  2. Drizzle with maple syrup, add mint and chopped pecans (according to taste).
