Ingredients
  • For the Salad
  • 1 small papaya, cubed
  • 1 large cucumber, cubed
  • 1 jicama root, pealed and cubed
  • 1 tablespoon sunflower seeds
  • 1 tablespoon cilantro, chopped
  • For the Dressing
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 2 teaspoons agave
  • salt to taste
Directions
  1. Combine papaya, jicama and the cucumber in a large bowl. In a separate bowl, mix lime juice with agave. Slowly whisk in olive oil. Toss dressing to taste with salad. Sprinkle cilantro and seeds on the top. Enjoy!
