Super Easy Chicken Enchiladas

Tuesday is usually tacos night at my House. With kids sports and stuff I sometimes get overwhelmed... Today before leaving I put 3 chicken breast in the slow cooker covered them with salsa (mine was homemade the nigh before but store bought will do the trick) and cooked them on low for 5:30 hours.... Came home after baseball pulled it out and made chicken and bean enchiladas, topped it with the sauce from slow cooker and sprinkled with cheese, out in the oven for 10-15 minutes et voila. That chicken was meltingin my mouth, it was so juicy and tasty!!! —Virginie Degryse

What You'll Need
Ingredients
  • 3 chicken breast
  • 1-2 cups Salsa ( homemade or store bought will do the trick)
  • 6 wholewheat tortillas
  • 1 avocado, cubed
  • 1 cup Mexican cheese
Directions
  1. Place 3 chicken breasts in the slow cooker and cover them with salsa and cook them on low for 5:30 hours.
  2. Pull it out and make chicken and bean enchiladas, top it with the sauce from slow cooker and sprinkled with cheese.
  3. Cook it in the oven for 10-15 minutes, top with the avocado and more cheese if you feel like it.
  4. Et Voila, Bon Appetit!

Hi! You have a step, "Pull it out and make chicken and bean enchiladas", with no instructions on how to do so, or what beans to get... Any suggestions?

sorry, you can add any kind of beans you like. I added canned black beans that I rinsed. But I have done it also with pinto beans or even with corn... It depends on what you have at hand and what you like.
