This pulled pork is ridiculously simple and so so good. I love the crockpot cooking method -- it works like a charm for pork shoulder. I used organic cola made by Blue Sky (because I couldn't bring myself to use Coke... sorry!) and I highly recommend it. I didn't use the full cup of brown sugar, but felt it was plenty sweet. I served the pulled pork on homemade whole wheat mini-baguettes and it was the perfect Friday night dinner after a busy week. - WinnieAb —The Editors

Ingredients
  • 4 pounds pork shoulder
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 1 jalapeno, minced
  • 1-2 cups chicken stock
  • 1 tablespoon cumin
  • 1 cup brown sugar
  • 1 bottle hot taco sauce
  • 1 can Coke or plain cola
  • salt and pepper to taste
  • buns
  • sliced tomatoes, optional
Directions
  1. Place crockpot under high setting and add pork shoulder, garlic, onion, jalapeno, and enough chicken stock to come up half way on the pork. Let sit in crockpot at high for about 1 hour.
  2. Place crockpot at low setting and let cook for about 6-8 hours. (Perfect for a workday).
  3. Drain the chicken stock and add pork back into crockpot. Shred pork and add cumin, brown sugar, taco sauce, and cola. Season with salt and pepper to taste. Let sit for at least 30 minutes.
  4. Serve on toasted buns with a slice of tomato.

I made this for Super Bowl Sunday and it went over well. Served with brioche rolls and cole slaw. Put it in the slow cooker on low at 10 pm and turned it off at 6 am to shred the pork and add the cola, etc. It worked great and was easy. I heated it back up later to serve at halftime. BTW, I cut the brown sugar by half and I will reduce it even further next time. 1/4 cup is more than enough brown sugar. I think the cola makes it pretty sweet...

This recipe has been shared with all of my family now; we've all made it. Great flavour and very moist. I like it even better if you are able to leave it for the next day. The flavour is even better. I always top it with some extra hot sauce too!

These were juicy and delicous. Using the crockpot was a great way to make the the pulled pork. It made the house smell good and its nice to leave it on during the day while at work. I cooked extra pork, and shredded & separated it to use in another dish later this week. The cola sauce was a nice change from regular bbq. I'll definitely make this again!

@blt2go: I used a 10 oz jar of medium taco sauce (because that's what I had!) I don't think the brand matters.
