Author Notes

So, I must have been on a tequila kick a few summers back...But the flavors of the watermelon & mango beautifully complement the tequila while the shrimp nicely accents the sweetness of the salad. The portion size is small for a nice light entree or as a appetizer salad. Any of the tequila lime simple syrup you are willing to retain is great in a margarita. —The Gaussian Kitchen

This was really good! I tweaked slightly:
> who needs skewers? I just grilled the shrimp on a rack
> I also grilled the watermelon before cutting it up
> I skipped the poblano and doubled the corn (which I rubbed with olive oil before grilling)
> I used a whole lime (juice and zest) for the syrup and skipped the second lime and the straining step. I mixed the whole salad together (including the shrimp) and poured the syrup over it.
Delicious. Looking forward to eating the leftovers!
