Omurice is a Japanese dish; it's basically fried rice topped with an omelette. It's a quick dinner that my mom would throw together on lazy weeknights. It's great for making with leftover rice and whatever random vegetables you might have in the fridge. I like to throw it back to my childhood by using hotdogs as the protein, but you could use tofu, diced chicken, sausage, anything you like. —Rach Kim

Ingredients
  • 3 tablespoons butter
  • 2 hotdogs, diced (or a protein of your choosing)
  • 1 potato, diced
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 1/4 cup frozen corn
  • 1/4 cup frozen peas
  • 4 cups cooked rice (leftover cold rice is best)
  • 1/2 cup ketchup
  • 4 eggs
  • 1/2 cup cream (or milk)
  • 2 tablespoons oil
  • Sriracha & ketchup
Directions
  1. Heat a large skillet over medium heat and add in the butter. Once it's melted, toss in the onion and potato and cook for a few minutes or until the potato is tender and onions are soft.
  2. Add in the bell pepper and hotdogs and cook until the hotdogs have some color. (*If you are using a different protein, especially if it's raw, make sure it's cooked through at this point.) Add in the peas and corn and cook just until defrosted.
  3. Add in the rice and stir to combine until the ingredients are well distributed and the rice is warmed through. Add in the ketchup and stir. Portion the rice onto four plates.
  4. Beat together the eggs and cream. Add a little oil to a small frying pan (I like a tiny 6" pan) over medium heat. Cook up four individual omelettes.
  5. Place an omelette on top of each plate of rice. Squeeze on some ketchup and Sriracha and serve.
