Preheat oven to 450°F. Whip the egg whites to soft peaks then sift in flour. Use spatula to slowly mix then add in the rest of the ingredients slowly incorporating them.
Lower the heat to 400°F prepare baking sheet with parchment paper and spray with tablespoon olive oil and add them with small ice cream scoop for uniformity should be about a table spoon each.
Bake for six minutes or until done which can vary based on oven.
You may want to season with salt and pepper but I find the fish and olives to be briny and salty enough not to overkill!
