Ingredients
  • 1 whole chicken
  • 1 tablespoon salt
  • 2 teaspoons pepper
  • 2 teaspoons Smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon Canola oil
  • 2 ripe large tomatoes
  • 2 tablespoons queso fresco
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 4 Poblano peppers or similar
  • 4 corn tortillas
  • 1 lime
  • 1 cup greens
Directions
  1. Clean chicken and butterfly it in half (cut lengthwise not all the way through).
  2. Mix salt, pepper, paprika, garlic powder and oil and create a rub. Rub the chicken with the mixture.
  3. Prepare grill for direct heat over medium hight heat. Place chicken breast side down and cook for 6 minutes. Turn over and do the same.
  4. Change chicken to indirect heat and cook chick3n 35-40 minutes or until reaches 165 degrees.
  5. Chard peppers. Slices tomatoes, place greens and drizzle olive oil, queso fresco, salt, lime.
  6. Warm tortillas and enjoy!

Reading this article reminded me of one of our family evenings where we had an Argentine asado https://argentineasado.com/. Each of us brought our favorite spices, and in the end we created the perfect mixture for steaks! I especially remember the garlic and smoked paprika, which added incredible flavor.
