whole chicken

salt

pepper

Smoked paprika

garlic powder

Canola oil

ripe large tomatoes

2 tablespoons
queso fresco

1 tablespoon
olive oil

1 teaspoon
salt

Poblano peppers or similar

corn tortillas

lime
-
1 cup
greens
Directions

Clean chicken and butterfly it in half (cut lengthwise not all the way through).

Mix salt, pepper, paprika, garlic powder and oil and create a rub. Rub the chicken with the mixture.

Prepare grill for direct heat over medium hight heat. Place chicken breast side down and cook for 6 minutes. Turn over and do the same.

Change chicken to indirect heat and cook chick3n 35-40 minutes or until reaches 165 degrees.

Chard peppers. Slices tomatoes, place greens and drizzle olive oil, queso fresco, salt, lime.

Warm tortillas and enjoy!
