Adapted from an old Organic Valley recipe, this excellent no-cook ice cream is perfect for summer: Quick and easy, you don't need to turn on the stove, and it highlights summer berries at their peak, with the tang of buttermilk and sour cream to balance it out. —Posie (Harwood) Brien

Ingredients
  • 4 cups strawberries, hulled and quartered
  • 3/4 cup sugar
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups cold buttermilk
  • 1/3 cup sour cream
Directions
  1. Purée the strawberries with the sugar in a food processor or blender until smooth.
  2. Add the salt, buttermilk, and sour cream and blend well.
  3. Pour the mixture into an ice cream maker and process according to the instructions. Once fully churned, chill in the freezer until your desired consistency.

Did anyone roast the strawberries? That's a method other
recipes mention to reduce the amount of water.

Yum! I too used 1/2 c heavy cream with 1 c (1%) buttermilk. I oven roasted strawberries as mine were a bit tart (mixed in sugar first) and used just 2/3 c puree rather than whole batch after reading a comment on iciness. In addition, i reduced sugar to 2/3 c, but added a tbl of vodka near the end of a 22 min churn with hope of reducing ice crystals/hardness from using less sugar. It came out fantastic, perfect consistency too. Thank you for the great recipe - it was fun to riff on it a bit!

Delicious! Super easy to make. I did a cup of buttermilk and half a cup of heavy cream as I couldn't find full fat buttermilk. Tastes of nothing but wonderfully fresh strawberries. Perfect!

Reporting back! Was going to make this today for an ice cream pie but the store was out of strawberries. I made it with blueberries instead with great results. Curious to try with other fruits. I'm looking at you peaches!

How do you clean grease stains off stove tops with burners built in, glass tops?

glass tops / use Cerama, it's sold in grocery stores, Home Depot , Lowes...etc.
Very easy to use , it's made just for glass tops. Directions on container ar simple. Be sure it 's for glass tops.

My gelato was really hard as well, I think because we used a bit more strawberries than the recipe asked for (just to use them up), so the water content was higher than it should have been. But the flavor was spot on. Once we let it warm up a bit for scooping, it was delicious.

This came out really icy for me, not even a little like ice cream. I'm sure it will be hard as a rock when it comes out of the freezer. I followed the instructions and ingredients as given - any idea where this went wrong? I feel bad for having wasted the strawberries :(

Hm strange!! You mean it was icy after churning in the machine? Did you use full fat buttermilk?

It was icy after churning in the machine. The only kind of buttermilk available at the grocery store was 1%. It is currently melting in the fridge now so I can attempt to repair it tomorrow. I am hoping the addition of some milk powder will soak up the excess water.

Yes would recommend whole buttermilk but my suspicion is that the berries were more watery than mine? That seems like the place where you could have the most variance. I wonder if you tried folding in whipped cream and then freezing if that would do the trick to rescue it.

I think the fault lies with the berries as well. I'll let you know how my salvage experiments go tomorrow. For my next trick I'll come up with a new dessert for tonight!

So, the fix: I added 1/2 a cup of skim milk powder but it still didn't seem very thick, so I added another 1/2 cup and a small bit of unwhipped cream and it is churning up beautiful now!

Do experiment with letting the strawberries and sugar macerate for a while, with basil and black pepper!
