Tofu Marinade

This simple marinade isn't a knock your socks off kind of recipe. I'm entering it because it is so useful to know about. I feel that most successful tofu recipes are a little sweet and a little salty, which this is. I'm not a vegetarian, but have many vegetarian friends and I myself don't eat meat too often (though when I do, I love it). I use this tofu over many dishes when I want a tasty protein. For example, I'm serving it over last weeks winner, "one night in Bangkok" this evening. I've been making the marinade forever--originally using it with chicken, but more recently for tofu. It came from my mom, and where she got it, I don't know. I certainly didn't create the marinade, and would love to give credit, if anyone does know where it came from. —erinbdm

Ingredients
  • 1/4 cup soy sauce
  • 1/6 cup sugar
  • 1 small garlic clove
  • 1/2 teaspoon dry grated orange peel
  • 1/8 teaspoon fresh ground pepper
  • 1 12 oz package of extra firm tofu
Directions
  1. Wrap tofu in paper towel, put it in the sink, and place something heavy on it for about 20 minutes.
  2. While you press the tofu, whisk all of the other ingredients together.
  3. Preheat the oven to 400 degrees. Allow tofu to marinate at least 30 minutes.
  4. Place tofu on parchment paper on a baking sheet and bake for about 20 minutes, turning once.
  5. Serve over whole grain salads, vegetable stir-fries, asian style salads, etc.
