Ingredients

Flour

1 teaspoon
baking powder

1 cup
Olive oil

1 teaspoon
Baking soda

1/2 cup
Walnuts (optional)
Directions

Preheat oven to 150°c. Spray an 8-inch loaf pan with natural cooking spray and set aside.

In a large bowl, sift together 2 cups of flour, 1 tsp baking soda, 1tsp baking powder, a pinch of cinnamon, 1 cup of olive oil, knead the mix.

Transfer batter to prepared pan and bake until risen, deep golden brown and a toothpick inserted in the middle comes out clean, 50 minutes.
