Vegan Organic Zucchini Bread with Olive oil

Serves: 4 persons

Ingredients

  • 2 cups Flour
  • 1 teaspoon baking powder
  • 1 cup Olive oil
  • 1 teaspoon Baking soda
  • 1/2 cup Walnuts (optional)

Directions

  1. Preheat oven to 150°c. Spray an 8-inch loaf pan with natural cooking spray and set aside.
  2. In a large bowl, sift together 2 cups of flour, 1 tsp baking soda, 1tsp baking powder, a pinch of cinnamon, 1 cup of olive oil, knead the mix.
  3. Transfer batter to prepared pan and bake until risen, deep golden brown and a toothpick inserted in the middle comes out clean, 50 minutes.
