Author Notes: Refreshing smoothie made with watermelon, coconut milk & yogurt, lime, mint, a touch of maple syrup and optional/encouraged coconut rum or tequila. Definite Summer crowd pleaser! —Sprinkles & Saturdays
- 4 1/2 cups Fresh Watermelon Chunks
- 2/3 cup Coconut Milk
- 3/4 cup Coconut Yogurt
- 1/2 cup Lightly Packaged Mint
- 4 tablespoons Fresh Lime Juice (or juice of 2 limes)
- 1 tablespoon Maple Syrup (optional)
- 1 splash Coconut Rum or Silver Tequila (optional)
- Place everything a blender and whizz until smooth.
