Watermelon Coconut Smoothie

Author Notes: Refreshing smoothie made with watermelon, coconut milk & yogurt, lime, mint, a touch of maple syrup and optional/encouraged coconut rum or tequila. Definite Summer crowd pleaser! Sprinkles & Saturdays

Serves: 2


  • 4 1/2 cups Fresh Watermelon Chunks
  • 2/3 cup Coconut Milk
  • 3/4 cup Coconut Yogurt
  • 1/2 cup Lightly Packaged Mint
  • 4 tablespoons Fresh Lime Juice (or juice of 2 limes)
  • 1 tablespoon Maple Syrup (optional)
  • 1 splash Coconut Rum or Silver Tequila (optional)

  1. Place everything a blender and whizz until smooth.
