Author Notes: I do not cook a lot of eggs. I have never cooked brunch; Madame does not approve. But I like this omelette for a simple lunch, so ... —La Bonne Femme
- 2 Eggs
- 1 piece Gruyere
- 1 piece Raisin toast, Pepperidge Farm
- Salt and pepper
- Prepare the omelette in hot pan with melted butter. Add salt and pepper. Cook gently & quickly. Before folding, add the raison toast.
- Remove immediately to plate; add slice of cheese. Broil very briefly to melt.
