Gluten Free Garbanzo Bean Pasta Made with Chickpea Flour

Ingredients
  • 300 grams garbanzo bean flour/chickpea flour
  • 1/2 cup tapioca or potato starch
  • 1 packet xantham gum
  • 4 large eggs
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon water
Directions
  1. Except for the water, place all ingredients in a food processor.
  2. Process until the mixture starts to form a ball.
  3. If mixture is not fully hydrated, add 1 Tablespoon of water and pulse a few times.
  4. Wrap your dough with plastic wrap and set aside to rest for at least 30 minutes.
  5. Cut your dough into 6 equal pieces.
  6. Roll each piece of dough into a rectangle using the extra Garbanzo flour to prevent sticking. Try to roll the dough as thin as possible; this should not be difficult if the dough is well rested.
  7. Using a pizza cutter and ruler as a guide, cut each piece of dough lengthwise into strips ½” wide.
  8. Create a nest with the noodles of each piece of dough.
  9. The nests may now be frozen or refrigerated until ready to use.
  10. Bring a large pot of salted water to a boil. Cook noodles 4-7 (if frozen) minutes. Drain and toss with olive oil to prevent sticking.

This is absolutely delicious pasta! I love the idea and convenience of Banza pasta from the grocery store but my family find the grainy/crumbly texture off-putting. This recipe is so darned delicious and has a lovely soft texture that is MUCH closer to wheat flour pasta. Even my picky 12-year old gobbled it up and said it was delicious (and that was AFTER she already knew it was garbanzo bean-based, so... huge win). I cut into ribbons on pasta machine #8, nice and thin without falling apart. This is for sure on my rotation now, and my diabetic husband was so happy to be able to snarf down a bowl of pasta without spiking his blood sugar. Could not be more delighted to have found this recipe. Thanks!!

How many grams or tablespoons is a packet of xantham gum?

I'm going to assume it's a 'packet' like sugar, so about a tbsp.

This is actually good gluten-free pasta. I worked the dough like I would if I had made it with white flour. It was initially difficult to work with but became more pliable as I folded and pressed it. I ultimately cut it on 4 but it could have gone thinner. Be patient with it. Also, the flavor complemented my Amatriciana sauce. I was concerned they would clash. I have a friend who can't do gluten, this is a great substitute. I followed the recipe to the t.
