Strawberry - Lemon Cheesecake Ice Box Pie

My kids love cheesecake but I do not like baking them. They never turn out right! So I was in the kitchen one day and just started adding things together that I knew they would like! It is now one of our favorite pies! —Tammy Wooten Stephens

What You'll Need
  • 1 small box of lemon pudding
  • 8oz Cream Cheese - room temperature
  • 24oz Cool Whip
  • 1 can of sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 teaspoon Vanilla
  • 1 pint Fresh Strawberries
  • 1 Pre-made Graham Cracker Pie Shell
  • Milk for preparing pudding
  1. Prepare pudding with the pie filling directions.
  2. Cream the following together: Cream Cheese and Sweetened Condensed Milk
  3. Mix in the pudding to the cream cheese mixture.
  4. Stir in the following: Half of the Cool Whip, vanilla, lemon juice and half of the strawberries. (Slice or chop the strawberries)
  5. Pour into the Pie Shell.
  6. Top the pie with the rest of the cool whip and strawberries.
  7. Cover and put in the refrigerator for at least an hour before serving!
