Totally healthy, full of dates, walnuts, hemp seeds and other goodies. Oh, and chocolate. And all you need is a food processor, a freezer and 30 minutes. These brownies are so delicious, you’d never even notice that they’re good for you. So good and nutritious in fact, that I even allow myself to eat them for breakfast. Don’t ever go back to that ‘ish filled with refined sugar, processed flour and junk. And like many of my favorite recipes, it’s also vegan!
This recipe is based on one similar to a recipe used by my professor at SPC. It is not, tony knowledge, published in any way shape or form. —Abbie
Ingredients
- Brownies

2 cups
raw walnut pieces

1 cup
hemp seeds
-
3 cups
Medjool Dates, pitted

1 cup
raw cacao powder
-
3 teaspoons
vanilla extract

1/2 teaspoon
salt
-
6 tablespoons
raw cacao nibs

1/2 cup
raw walnut pieces
- Topping
-
1 cup
coconut oil
-
1 cup
raw cacao powder
-
1/2 cup
agave nectar or maple syrup

1/2 teaspoon
vanilla extract

salt to taste
Directions

Line a 8 x 9 pan with parchment paper.

In a food processor, blend 2 cups walnuts to a fine crumb.

Add dates and process until sticky.

Add the cacao powder, vanilla and salt.

Blend, starting low and turning up to high, scraping down every 10-15 seconds until combined.

Press into lined pan, and freeze for 10 minutes.

While brownie mixture is in the freezer, prepare the topping:

Combine all remaining ingredients in blender and blend until smooth.

Spread on top of frozen brownie mix and freeze for another 20 minutes.

Cut while still firm and frozen. Store in freezer for up to 6 weeks!
