tomato cilantro salsa

This can be used as a sauce for chicken or fish fillets. When tomatoes are at their best I like to make a large batch and drink it as a smoothie. If you prefer, you can replace cilantro with basil. —cookinthecountry

  • 1 large tomato
  • 1 bunch cilantro
  • 1 lime
  • 1 splash olive oil
  • 1 pinch salt
In This Recipe
  1. Slice the end off the tomato and grate it.
  2. Place the grated tomato in a blender and add the cilantro, stalks and all.
  3. Add the remaining ingredients and whizz for about 10 seconds.
  4. Serve immediately.
