This can be used as a sauce for chicken or fish fillets. When tomatoes are at their best I like to make a large batch and drink it as a smoothie. If you prefer, you can replace cilantro with basil. —cookinthecountry
Ingredients

large tomato

1 bunch
cilantro
-
1
lime
-
1 splash
olive oil

1 pinch
salt
Directions

Slice the end off the tomato and grate it.

Place the grated tomato in a blender and add the cilantro, stalks and all.

Add the remaining ingredients and whizz for about 10 seconds.

Serve immediately.
