Healthy one dish salad with a pesto mortar type dressing that can easily be chopped by hand as well. —Barbara Zapzalka
Ingredients
- Lemon Green Dressing

1/4 cup
parsley

1/4 cup
basil

garlic cloves

1
lemon, juiced

1/4 cup
olive oil

1 pinch
red pepper flakes, optional

salt to taste
- Salad
-
1
14 oz. can chickpeas or 2 c. cooked

1 cup
cherry tomatoes, halved

cucumber medium sized, sliced

1/4
red onion, thinly sliced

1/2 cup
black olives, chopped

1/2 cup
Feta, crumbled

salt to taste
Directions

Finely chop parsley, basil and garlic by hand or pesto mortar. Add lemon juice, olive oil, pepper and salt to taste.

Combine all salad ingredients and add dressing to taste.
