Makes 16 squares

base

  • 8 medjool dates, pitted
  • 1 cup strawberries
  • 0.25 banana
  • 2 cups macadamia nuts
  • 3 tablespoons coconut oil
  • 3 tablespoons chia seeds
  • 0.5 cups desiccated coconut
  • 1 teaspoon vanilla extract

icing

  • 1 cup macadamia nuts
  • 0.5 cups melted coconut oil
  • 0.5 cups maple syrup
  • 4 tablespoons lime juice
  • 1 teaspoon vanilla extract
  1. Line a baking tray with baking paper, I used a 24cm x 24cm cake tin.
  2. Blend the dates in a food processor until smooth. Add remaining base ingredients and pulse until just combined. The mixture should stick together like a dough, if not, add a tablespoon of water and pulse again.
  3. Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set.
  4. Wash and dry the processor, add all of the icing ingredients and blend until smooth and creamy.
  5. Remove tray from freezer and pour over icing, set in the fridge or freezer. Once the icing is firm, cut into 16 squares and store in the fridge or freezer.
