This was the result of a poorly stocked college kid's pantry, but, does it work. I've used this recipe with whole wheat flour and all purpose, and it turns out fine each time, just a bit texturally different. The banana is sweet so sugar can be adjusted too upon preferences. Oil can be substituted for butter and 2 oz of apple sauce can be substituted for the egg for a vegan friendly options as well. —Ida

butter at room temperature

light brown sugar

granulated sugar

egg

1/2 teaspoon
vanilla

baking soda

baking powder

1/4 teaspoon
salt

dried banana chips ground up like flour

all purpose flour

chocolate chips
Directions

Preheat oven to 350F degrees

In a large bowl, cream butter and sugars. Beat in egg and vanilla.

In a separate bowl mix baking powder, baking soda, flour, banana flour, flour, and salt. Once combined, add to wet ingredients.

When a dough has formed, stir in chocolate chips.

Spoon mixture onto a baking sheet lined with parchment paper and bake for 8-12 minutes, or until cooked through.
