Author Notes: While n cooking school in Sorrento Italy I earned many recipes using apricots and pistachios so developed this spread for savory crackers or to top off dried apricots. —Betty
Makes one thick cup
- 1 cup Pistachios
- Juice of 2 lemons Lemons
- 1 teaspoon Sugar
- 1 tablespoon Dried sage
- Blend all together in a food processor till nicely ground together Refrigerate a couple hours. Use as a spread on fresh or dried apricots Excellent spread on savory crackers!
