Ingredients

granulated sugar

2 ounces
unsalted butter, melted

1 1/3 cups
self raising flour, sifted

cream

1 teaspoon
vanilla extract

medium Granny Smith apple, peeled, cored and thinly sliced

1 tablespoon
granulated sugar

1 teaspoon
ground cinnamon
Directions

Preheat oven to 160 º C / 325 ° F. Grease and line a 2 1/2 " deep, 4" x 8" inch (base) loaf baking tin. Allow the lining to hang over 1" on the long sides of the tin

Sift the flour into a bowl. In a small bowl mix the tablespoon granulated sugar and teaspoon ground cinnamon. Set aside

In another bowl beat the sugar with the egg until pale and fluffy, add the vanilla extract. Stir in the melted butter and mix

Fold the flour into the batter, alternate with the cream until they are well combined. Pour into the prepared tin

Garnish the top with the sliced apple and sprinkle the cinnamon sugar abundantly on top

Bake for 1 hour or until a skewer inserted in the centre comes out clean. Allow to stand for 10 minutes and unmold on a rack to cool.
