Since watermelons are grown locally and ubiquitous in Chennai, they are almost always very sweet. Sometimes a little too sweet for my liking so I like to offset that with some salt. And yes, it is true that the salt also accentuates the taste of the fruit, so even if you find yours to be not so sweet, I would recommend adding a pinch. This watermelon lemonade is so gloriously simple, you can have it ready to drink in ten minutes tops. —Kirthana | Theblurrylime

Ingredients
  • 500 milliliters watermelon juice
  • 80 milliliters lemon juice
  • 1/8 cup sugar
  • 1/8 teaspoon salt
  • 10-15 fresh mint leaves
  • Ice cubes to serve
Directions
  1. Make a simple syrup: Mix together 1/8 cup sugar and 1/8 cup water in a saucepan and bring to a simmer just until the sugar is completely dissolved. Remove from heat and add the mint leaves (keep some for garnish). Steep for 2-3 minutes, then remove mint leaves and discard.
  2. Combine watermelon juice, lemon juice, salt, and sugar syrup in a jug and stir.
  3. Serve with ice cubes, lemon slices and a few fresh mint leaves.
