The Mysterious Tea Eggs

Some Chinese believe that the practice of cooking tea eggs may be harmful. I am not certain if this is 100% true but some professionals have said it will produce harmful nitrates from acid reacting with iron from the eggs because it is cooked for a long period of time. Because of this, the eggs may NOT be easily digested, and MIGHT cause cancer.
Umm… It won’t scare me away, as I do not eat it every day, plus there is more delicious food in the world I need to try. —My Nomadic Kitchen

What You'll Need
Ingredients
  • 4 tablespoons soy sauce
  • 2 anise
  • 1 colve
  • 1 cinnamon stick
  • 2 teaspoons sugar
  • 2-3 tablespoons red tea
  • 2-3 cups water
Directions
  1. Boiling eggs about 5 minutes,let it cool down a little bit ,slightly break eggs
  2. Meanwhile, add rest of all ingredients to the pot until boilling . add eggs and simmer for 1 hour
  3. When they done, keeping eggs in pot with soup and leave it room temperture a few hours . ( bring you more flavor~)
  4. To save : (i will keep soup with eggs ) refrigertor save up to 4 days TO serve: salad/noodle/sandwich/snack....
