Grill the peperoni on all sides until they turn black burned. Wrap them in a old newspaper in order to cool gently wetting the newspaper for 3-5 minutes. This will help to peel them easily. Now remove the burned skin using your fingers.
Cut them in half and eliminate the stem on the top and all seeds inside. Then slice all peperoni longitudinal in slim strips. The slimmer and the longer the better.
