Dark chocolate coconut butter cups! Also known as, cups of joy. The most delightful dark chocolate treats filled with creamy coconut butter and sprinkled with hemp seeds. A simple, decadent recipe that will brighten your week, from the inside out. —Karlie Kashat

Ingredients
  • 1 cup dark chocolate
  • 1/2 teaspoon coconut oil
  • 1/2 cup coconut butter
  • 2 teaspoons maple syrup
  • 1/4 cup hemp seeds, for topping
Directions
  1. Prepare 12 muffin tins with silicone or parchment liners.
  2. Melt chocolate and coconut oil over low heat until smooth.
  3. Drop a small amount of chocolate into the bottom of each cup and move tin so it covers bottom.
  4. Place in freezer at least 5 minutes.
  5. Melt coconut butter in microwave 30 s, stir in maple syrup.
  6. Remove chocolate from freezer and drop some coconut butter in the center of each chocolate.
  7. Re-heat the remaining chocolate if necessary, and pour chocolate to cover the coconut butter.
  8. Move the tins around once more to ensure chocolate is covering all of the coconut butter.
  9. Sprinkle with hemp seeds.
  10. Place in freezer at least 10 more minutes.
  11. Enjoy!

If I choose to skip the maple syrup in here, do I need to replace it with anything? I love maple syrup but I would like to make these as low sugar as possible. And we have some sugar in the chocolate already. I can’t wait to try these. Thank you for the recipe.
