Author Notes: Continuing the low carb alternatives to familiar dishes. This one was inspired by the recipes at https://elanaspantry.com and http://www.food.com. Adding the flax meal, in particular, I think, gives the "cornbread" feel. I have been using this divided skillet, but muffin tins would be fine, as would an entire cake that you cut. This is the 'half' recipe that makes half a dozen pieces.Brian Coppola

Serves 6

  • 1 cup fine almond flour
  • 1/8 cup flax meal
  • 1 teaspoon baking soda
  • 1 tablespoon cider vinegar
  • 2 large eggs, beaten
  • 4 teaspoons heavy cream
  • 1/4 cup melted butter
  1. combine and mix the dry ingredients
  2. add the butter and mix well
  3. add the eggs and mix well
  4. add the cream and the vinegar, mix well
  5. spoon out into pan, mold, skillet, etc
  6. bake at 350F for 20-25 minutes
