This is a variation of a recipe from a Bicentennial cookbook published in my hometown (Halifax, PA). I'm not much of a baker, but I usually make this once or twice a year--it's so incredibly easy! And me being me, I upped and altered the spices... —KKNY

Ingredients

medium-sized semi-tart apples (like Fuji or MacIntosh), peeled, cored, and diced

1 cup
sugar

1 cup
all-purpose flour

large egg

1/4 pound
butter, softened

1 teaspoon
vanilla extract

1 tablespoon
ground cinnamon

1 teaspoon
ground ginger

1 teaspoon
ground cardamom

1/2 teaspoon
baking powder

1/2 teaspoon
baking soda

Dash
salt

1 cup
chopped walnuts
Directions

Make sure the butter is soft. Preheat oven to 375 degrees F.

In a large bowl, mix all of the ingredients by hand. As you mix, the apples will moisten the dough, and you'll end up with a stiff batter.

Spread into a greased 9x7" pan. Bake for 40 minutes.
