A little gem in your ramen. Ajitsuke tamago or soy sauce marinated soft-boiled egg, that is! This recipe is super easy, yet promises you an authentic flavour (trust me. I am a Japanese recipe developer). The key ingredient of the recipe is "mentsuyu", a soy sauce-based flavoursome noodle sauce that gives an instant Japanese flavour without fuss (and a mess). Grab a mentsuyu bottle at a nearby Asian grocery store and let's get started! —sweetsholic

What You'll Need
Ingredients
  • 3 eggs
  • 2 tablespoons mentsuyu (concentration type)
  • 6 tablespoons water
  • 1/2 tablespoon soy sauce
  • 1 snack bag
Directions
  1. Bring the water to a boil. Boil the eggs for 6 minutes.
  2. Immediately transfer the eggs in a cold water bath. Drain the water and top it up with cold water - repeat the process three times until the eggs are cool down.
  3. In a snack bag, place the peeled eggs and the rest of the ingredients. Zip it, fold the bag twice and pinch the crease with a peg (check out the pic!). By doing this, the eggs are fully soaked in the brine. Marinate the eggs in the fridge at least overnight.
