Author Notes: A little gem in your ramen. Ajitsuke tamago or soy sauce marinated soft-boiled egg, that is! This recipe is super easy, yet promises you an authentic flavour (trust me. I am a Japanese recipe developer). The key ingredient of the recipe is "mentsuyu", a soy sauce-based flavoursome noodle sauce that gives an instant Japanese flavour without fuss (and a mess). Makes: 3 eggs
tablespoons mentsuyu (concentration type)
tablespoon soy sauce
- Bring the water to a boil. Boil the eggs for 6 minutes.
- Immediately transfer the eggs in a cold water bath. Drain the water and top it up with cold water - repeat the process three times until the eggs are cool down.
- In a snack bag, place the peeled eggs and the rest of the ingredients. Zip it, fold the bag twice and pinch the crease with a peg (check out the pic!). By doing this, the eggs are fully soaked in the brine. Marinate the eggs in the fridge at least overnight.
