Directions

Cut peaches, plums and apricots into large pieces. Transfer to a baking dish and toss with 1/2 cup sugar, 2 tbsp flour and 1/4 tsp salt. Set aside.

Preheat oven to 350°F. Whisk 1/2 cup flour, 3/4 tbsp baking powder and 1/4 tsp salt in a medium bowl. Set aside.

Using an electric mixer, beat 1/2 cup butter and 1/2 cup sugar until light and fluffy. Add ground almonds. Add eggs one at a time, beating to blend after each.

Mix in dry ingredients.

Drop batter over fruit using a spoon. Bake until topping is golden brown, 50–60 minutes.

Let cobbler sit at least 20 minutes before serving.
