Peach, Plum and Apricot Cobbler

This peach, plum and apricot cobbler combines summer fruits that are in season together. —na2na3

What You'll Need
Ingredients
  • Fruit filling
  • 6 peaches
  • 4 plums
  • 8 apricots
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • Topping
  • 1/2 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup sugar
  • 100 grams almonds, ground
  • 3 eggs
Directions
  1. Cut peaches, plums and apricots into large pieces. Transfer to a baking dish and toss with 1/2 cup sugar, 2 tbsp flour and 1/4 tsp salt. Set aside.
  2. Preheat oven to 350°F. Whisk 1/2 cup flour, 3/4 tbsp baking powder and 1/4 tsp salt in a medium bowl. Set aside.
  3. Using an electric mixer, beat 1/2 cup butter and 1/2 cup sugar until light and fluffy. Add ground almonds. Add eggs one at a time, beating to blend after each.
  4. Mix in dry ingredients.
  5. Drop batter over fruit using a spoon. Bake until topping is golden brown, 50–60 minutes.
  6. Let cobbler sit at least 20 minutes before serving.
