Mima's Eatmeal

I make this whenever I run out and eat it for breakfast nearly every morning. Keeps me satisfied until lunchtime. You may think it's really just oatmeal but when my grandson Harry was two he heard "eatmeal " cause we were eating it. Makes sense. —Bakezoid

Ingredients
  • 4 cups Almond milk
  • 1 cup Milk
  • 1/2 cup Steel-cut oats
  • 1 1/2 cups Rolled oats
  • Cinnamon
  • Vanilla
  • Agave
Directions
  1. Bring 4 c almond milk & 1 c skim milk to a boil. Reduce to a simmer and add 1/2 cup steel-cut oats and 1 1/2 cups rolled oats. When it returns to boil add vanilla and cinnamon to taste and simmer for 20 min. Taste to be sure you like the consistency. Allow to cool somewhat and add agave to taste. Store in refrigerator. Makes about 6 servings for me. To serve add chia or mixed seeds ( I use Trader Joe's Super Seed and Ancient Grain Blend) , 1 tbsp almond butter & milk. Microwave for 2 min, stirring halfway. Add fruit if desired. Berries, peaches or mango are particularly good.
