Author Notes: Smoked Salmon Salad
This delicious salmon salad recipe is super simple, really refreshing and totally delicious. It makes a fantastic easy lunch or side dish and you can even prepare it the night before and take as a grab and go lunch.

- 80 grams smoked salmon
- 4 pieces slices cucumber
- 2 teaspoons pumpkin seeds
- 1/2 piece carrot
- 1 piece beetroot
- 100 grams baby red leaf, spinach, rocket, red chard
- 8 pieces physalis
- Grate the carrot.
- Slice the cucumber lengthways with a potato peeler.
- Slice the smoked salmon.
- Add all the ingredients to a plate and serve with fresh lemon juice or our sesame salad dressing.
