Healthy Nachos With Chickpea Flour

What You'll Need
  • 100 grams chickpea flour
  • 1 teaspoon baking powder
  • 2 tablespoons coconut oil
  • 1/2 teaspoon black pepper
  • 2 teaspoons chives
  • 4 tablespoons warm water
  1. Preheat the oven to 175C/350F.
  2. Place the chickpea flour, chives, pepper and baking powder into a large mixing bowl and mix well.
  3. Add the warm water and stir until the dough comes together. If you need to add more water to ensure the dough comes together add it a tablespoon at a time.
  4. Once the dough is rolled out very thinly - slice it into small triangles, then place them in the oven for 10-15 minutes.

I tried these and they tasted great, if a little bit peppery. I would definitely double this recipe however, as there was barely enough chips for one person. There were no instructions on what to do with the coconut oil so I wound up just working it in directly to the dough, and they turned out great. I also recommend cutting into preferred shapes with a cookie cutter, this just helps keep them more uniform :)
