This quick and easy vanilla porridge recipe is our new favourite breakfast, do we always say that? It’s super easy to make, delicious, creamy and naturally sweet. You can play around with the toppings and use any mixture of your favourite nuts and fruits. We’ve gone for cranberries, nectarines, banana, walnuts and dried apricots and it was delicious.

Ingredients

vanilla pod

7 pieces
cranberries

1/2 piece
nectarine

10 grams
dried apricots

160 milliliters
almond milk
-
45 grams
oats
-
1 teaspoon
maple syrup

10 grams
walnuts

1/2 piece
small banana
Directions

Split the vanilla bean and scrape out the inside, then place in a saucepan with the oats and almond milk. Heat over a medium heat for 5 minutes, stirring regularly.

Meanwhile, slice the nectarine, banana and crush the walnuts.

When the porridge is ready, top with the fruit, nuts and maple syrup.
