Ingredients
  • 2 cups Sugar
  • 1 cup salad oil
  • 3 eggs whole at room temp
  • 3 cups plain flour
  • 3/4 cup grated coconut frozen or canned
  • 1 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 3 cups diced firm cooking apples
  • 1 cup walnuts or pecans chopped
Directions
  1. Mix sugar and oil, add eggs and mix well
  2. Combine flour, salt and soda add to sugar mixture
  3. Add vanilla, apples, nuts and coconut, Mixture will be very thick
  4. Pour into greased and floured pan. Bake at 325 for 1 hourand 30 minutes

Delicious! Loved the texture as well as flavor. 2 c sugar sounded like a lot, but wasn't. Used Canola, but next time will try corn oil just to see if there's difference in flavor. Used sweetened coconut flakes since it was what I had and I think worked fine. Used Granny Smith Apples and walnuts (didn't chop, I like to bite into big pieces). Used my Kitchenaid mixer since I'm not as strong as I used to be and it was good that I did because mixture does get very thick as stated. I just sort of turned on/off slowly at end to mix apples, nuts and coconut, on stir. Otherwise would have had ingreds flying out. I sprayed Nordic Ware Fleur De Lis Bundt pan with canola oil and forgot flour, but cake released easily, looked beautiful. Next time I'd like to butter and flour pan because I think I prefer butter flavor. I did preheat oven, which wasn't indicated and I let cake cool in pan for 15 mins after I took out of oven, then turned out onto cooling rack to cool completely. Thanks for a great recipe.
