I loved drinking cherry lime rickeys at diners as a kid, and today, it's the most favored drink at every party I serve it in. It has the classic personality of a cocktail, because it was derived from the alcoholic, Prohibition-era rickey, but the delights of a soda. With the freshness of lime juice and the tangy-sugary touch of maraschino cherries, it is the refreshing pink-ish sparkling fizz drink everyone can delight in. —Caroline Choe

Ingredients
  • 1/2 cup sugar
  • 1/2 cup water
  • 7 limes, juiced (or at least 1/2 cup)
  • 5 tablespoons cherry syrup (from maraschino cherry jar)
  • 1 & 1/2 liters seltzer water (I prefer to use orange-flavored, but plain is fine)
  • ice cubes
  • maraschino cherries, limes or orange slices for garnish (optional)
Directions
  1. MAKE THE SIMPLE SYRUP: In a small pot, pour in the water and sugar and stir together over medium heat, until the sugar is dissolved. Let the syrup simmer on the heat for about 5-7 minutes, and then turn off the heat and transfer it to a bowl. Add in the lime juice and maraschino cherry syrup, and stir to combine thoroughly. Cover the bowl with plastic wrap, and refrigerate the syrup for 30-minutes to an hour.
  2. When the cherry-lime syrup has cooled, pour it into a punch bowl or large serving pitcher (or however you'd like to serve it).
  3. To the cherry-lime syrup, add in the fruit garnish (if you choose to include it) and seltzer water. Stir to combine.
  4. Serve in ice-filled glasses, and enjoy!

Cherry 7up and Costco's Margarita mixer. This year I used Sprite and Torani Cherry Lime syrup. Both are easily adjustable to the taste you want.

At my house, we serve these with a splash of Absolut Lime vodka. I guess cherry vodka would work too.
